TUESDAY: Chicken breasts with tri-colored bell peppers & fresh mango served over white rice.

THURSDAY: Mahi Mahi Tacos with mango and black bean salsa.

PROTEINS:

  • 4 Chicken boneless breasts or chicken tenderloins
  • Mahi Mahi 1 small steak per person; frozen is less expensive than fresh *Substitute Mahi Mahi for salmon, albacore or boneless chicken breast

PRODUCE:

  • 1 orange or yellow bell pepper
  • 1 pint cherry or grape tomatoes
  • 2 Roma tomato
  • 1 brown onion
  • 1 red onion
  • 1 head of garlic
  • 1/2 head small red cabbage
  • Cilantro
  • 1 Jalapeño or Serrano chili
  • Fresh corn or canned corn
  • 2 limes

CANNED:

  • Canned corn
  • Black Beans

GRAINS:

  • Rice
  • Corn tortillas
