Chicken Tacos with Homemade Guacamole

Chicken Tacos

Chicken tacos with homemade guacamole and salsa, rice, beans and an ice cold beer.

This is a great meal for left overs. My friend Kathi Lipp, author of “The What’s for Dinner Solution“, writes about cooking a whole chicken every Monday so she has a chicken for LOOP dinners, Left Overs On Purpose! This dish is a perfect LOOP dinner. After my family of three dines on a whole roasted chicken, (either one I have made at home or one already cooked and bought at my local grocery store) I shred the leftover chicken and store. I am assuming most of my brilliant readers already know how to make a taco and how to spice up this dish according to their family’s preferences. So, I’ll cut to the chase. Enjoy!

Prep Time: 15 minutes

Ingredients:

Taco filling:

  • shredded chicken
  • 1/4 cup diced onions
  • corn tortillas or prepped shells
  • fresh cilantro

Guacamole:

  • 2 ripe avocado
  • 1 large tomato (seeded)
  • 1 small Serrano or jalapeno chili pepper (seeded)
  • 1 green onion (include the white part)
  • salt, pepper, garlic salt to taste
  • juice of a lemon
  • fresh cilantro leaves

Preparation:

Cut and dice all the vegetables. When chopping the peppers, wear disposable plastic gloves to avoid burned skin or eyes). You can dice ahead of time, as early as the previous day, (other than avocado) Peel and mash avocados and reserve one of the pits. add seeded tomato, chili pepper, green onion, seasoning and a few leaves of torn cilantro. Before serving, add lemon juice and toss in the pit. Legend has it that keeps the guacamole fresh! try to serve as soon as it chills.

Cooking:

Add a little bit of vegetable oil or a few sprays of PAM into your frying pan, Add onions. Once they are soft, added shredded chicken, and cook until chicken is hot. Add cilantro at the last minute. It is a powerful herb in taste, but fragile in texture.

Warm corn tortillas.

Taco toppings: shredded lettuce, sliced tomatoes, grated cheese, sour cream

Serve with rice and beans.

  • Because we have an avocado tree, we can have a ripe avocado before I can get to the store. I keep on hand the dry guacamole mix and add my own avocados! The idea of left overs is that it is quick and easy!
